Bottled Sunshine – That’s how I describe my new 750ml Passionfruit and Snow Flower Gin. And after all the flamin’ rain we have had this year I think we all need a bit of bottled sunshine in our lives! It also comes with a free bottle of Passionfruit Tipsy Coulis - made from 7 hour gin steamed passionfruit.

This golden gin is distilled with thousands of fresh passionfruit grown in Tully, Far North Queensland. Tully is famous for having the highest annual rainfall in Australia. I then slowly infuse hand picked Snow Chrysanthemum Flowers from the Kunlun Mountains of Tibet which impart a warm sunny hue to the gin and add a layer of complexity not found in any other gin. These flowers burst out of the snow in early spring are hand picked in the morning above 4,000m in elevation and then carefully dried by small lot farmers in the Kunlun Mountains. The Kunlun mountain range divides Tibet and Xinjiang the most remote and undeveloped regioin of China. You can read more about these fascinating flowers here.

There is so much passionfruit in this gin we had to invent a ‘fresh botanical vortex chamber’ for our big still named "Iris". It’s huge and its purpose is to vapour distill the aroma and flavour out of the freshly scooped passionfruit pulp. I don't know of any other still which has anything like this in Australia. The vapour then passes through our second oversized botanical basket which contains Bulgarian high altitude juniper, Madagascan vanilla and Australian coriander seed.

The result is a very complex and unique aromatic gin which makes one of the most more-ish drinks ever the Temple of the Sun Cocktail. The aroma will make your mouth water.

After 7 hours of steaming in gin we were left with many kilos of zesty passionfruit pulp - so rather than feed it to the chooks and watch them run around tipsy all day Lee decided to make it into a lip schmackingly good dessert sauce  Passionfruit Tipsy Coulis. Gin infused passionfruit pulp, a touch of Madagascan vanilla (also from the gin basket), lemon juice from the lemons used in the gin are transformed into an adults only Coulis perfect to be poured over a pavlova, ice cream, fresh fruit, pancakes or shake a teaspoon up in cocktails!
