This deep blue gin is distilled with our single origin juniper and elderflowers from the high altitude Rhodope mountains in Bulgaria. Carefully distilled using spring water and a touch of honey from the hives on our finger lime farm at Kurrajong Heights. Madagascan vanilla smooths out the palette for a long complex finish. This gin has to age for several months after distillation and when it is ready we infuse with butterfly pea flowers from our farmers in central Thailand.
Butterfly pea flowers and elderflowers are a match made in heaven and the hint of honey brings them both together without making it sweet. The flavour is deep and smooth - perfect for cocktails but also great neat on ice to sip & contemplate life's little wonders.
This gin will change colour from blue to purple and pink with a splash of tonic water or citrus. The colour comes from butterfly pea flowers which are grown for Wild Hibiscus Flower Distilling Co by contract farmers in central Thailand.
Chief distiller Lee originally developed these flowers for the international market back in 2011 building a growers network which now contains over 100 small lot farmers producing consistent flowers of the highest international standard. Pictured right is Lee with two of his farmers Aey and Lek they have grown flowers for us for a decade now :)
His Thai company is now the worlds largest supplier of butterfly pea. Lee has consulted with hundreds of distillers, brewers and wineries all around the world helping them develop their own colour change gins, vodka, tequila, beer and wine and now has released his own blue gin presenting this flower in the best possible way matched with a rich smooth juniper, elderflower and Madagascan vanilla.
