Freshburst is crimson finger lime caviar in Vodka!

Each 200ml jar is 40% alcohol and contains thousands of pearls of finger limes! Simply add a tablespoon to your cocktails or glass of bubbly. This is a concentrated product to be used as a garnish - Made For Mixing!

Chief distiller Lee lives on a finger lime farm at Kurrajong Heights where he has more than 1,500 grafted finger lime trees. This product is made from his aromatic pink finger limes.The flesh of finger limes is like caviar and when you bite the little balls they pop in your mouth releasing a burst of aromatic finger lime and hibiscus vodka!

We carefully remove the caviar from inside the perfectly ripe finger limes. Then we make a high proof hibiscus vodka. We cold press our Wild Hibiscus Flowers to remove the intense crimson juice. We use this to dilute a tripple distilled vodka in our distillery. Then we add the pink caviar to the hibiscus vodka and allow them to mature for a few months before they are ready for release. This product has an alcohol content of 40%.

Add a tablespoon of this product to cocktails or a glass of bubbly and you will see the magic!  The little balls will dance with the bubbles and when you bite them they will pop in your mouth releasing a tart limey explosion of 40% abv Vodka!

Each bottle contains the caviar of approximately 7 fresh finger limes perfectly preserved in their raw state in vodka ;) Perfect for garnishing cocktails but why not try them also over oysters or make an alcoholic salad dressing.

The pink finger limes are grown on our 80 acre farm at Kurrajong Heights. Chief distiller Lee planted 1,600 finger lime trees back in 2010 and has crawled around and under each and every one of the trees at least 70x since tending to their needs and ensuring they produce the most amazing fruit! It took a further 3 years of research and development to create this gin.

Each bottle takes 18 months to create - 9 months to grow and nurture the fruit and another 9 to gently and skillfully convert the caviar to contain 40% alcohol gin and retain their dark pink colour.
