As we prepare for our move to the farm at Kurrajong Heights, we have created a dedicated and beautifully equipped chocolatier space within the distillery — the beginning of a new collection of chocolates and confections inspired by the 12,000 native food plants we grow.

Our first creations include Kurrajong-infused candied orange slices dipped in dark Belgian chocolate and finished with pyramid salt flakes, Macadamia & Kurrajong Butter Toffee Crunch (so freaking delicious it should be illegal), and a collection of handcrafted bon bons including Davidson’s Rainforest Plum & Coconut Ganache, White Chocolate & Finger Lime Cheesecake with bursts of gin-infused finger lime caviar, Dark Chocolate & Wattleseed Ganache, and Wild Hibiscus & Ginger in Dark Chocolate.

This is only the beginning. We’ll be adding new flavours and creations as we build towards Christmas and, eventually, welcome visitors to experience them at the farm.

Our first chocolate box will bring together a unique selection of these new creations, giving you a first taste of what is coming from the Wild Hibiscus chocolate kitchen. We guarantee you will not be disappointed.

farm to your glass

The pink finger limes are grown on our 80 acre farm at Kurrajong Heights. Chief distiller Lee planted 1,600 finger lime trees back in 2010 and has crawled around and under each and every one of the trees at least 70x since tending to their needs and ensuring they produce the most amazing fruit! It took a further 3 years of research and development to create this gin.

Each bottle takes 18 months to create - 9 months to grow and nurture the fruit and another 9 to gently and skillfully convert the caviar to contain 40% alcohol gin and retain their dark pink colour.
