The Botanist’s Collection is a delicious exploration of the Australian botanical world — inspired by the living collection we grow here on our farm in Kurrajong Heights.

Across our 80-acre farm, more than 12,000 native food, flower and rare spice plants are carefully grown, irrigated and harvested — from finger limes and Davidson’s plums to lilli pilli, lemon myrtle, native pepperberry and wild hibiscus flowers.

These remarkable plants are the inspiration for this collection.

This beautiful magnetic close gift box contains 18 pieces to taste, brew, cook with and discover, including:

  • 6 native fruit jams, marmalades, sauces and preserves

  • 6 Australian native spice recipe cards on a keepsake ring, featuring 12 recipes

The collection draws on almost 30 years of working with Australian native foods, developing products enjoyed throughout Australia and exported all around the world.

Some of our inspiration comes from Louisa Atkinson — a renowned trouser-wearing botanist, artist, naturalist and writer of the 1860s who lived just across the road from our farm. Her curiosity about the Australian landscape and its botanic marvels and their flavours is introduced inside the box.

The rare native spices and 12 recipes are included to encourage experimentation too — create something new, discover an unfamiliar flavour or add an Australian twist to a favourite recipe and share it with your friends and family.

Like the farm itself, the collection will continue to evolve. As new plantings mature, new ingredients become available and the seasons change, the exact selection will vary but each experience is unique and super tasty! We do not make things with a token amount of the native ingredient. Growing them on the farm allows us to present each ingredient in its best way for you to experience.

The pink finger limes are grown on our 80 acre farm at Kurrajong Heights. Chief distiller Lee planted 1,600 finger lime trees back in 2010 and has crawled around and under each and every one of the trees at least 70x since tending to their needs and ensuring they produce the most amazing fruit! It took a further 3 years of research and development to create this gin.

Each bottle takes 18 months to create - 9 months to grow and nurture the fruit and another 9 to gently and skillfully convert the caviar to contain 40% alcohol gin and retain their dark pink colour.
